More emphasis is placed on carbo-free meals and the Banting Boerie is chef Niska's take on the popular Boerewors Hotdogs served all over Southern Africa. A mini-foot long portion of kudu sausage (known as "wors") rests on grilled butternut, and baby spinach. Traditional chakalaka is given a creative twist by combining apple, dates, cumin, coriander and cinnamon to a marmalade consistency. The flavoursome combination is topped off with crumbed blue cheese and grilled aubergine. Served with a side portion of sweet potato chips and garnished with red cabbage and strips of green pepper. Healthy and delicious!
